[Awaji Noodles Industry, over 100 years in business] Dough (fresh pasta) kneaded by the island's climate The temperature and humidity are crucial for fresh pasta, which is carefully kneaded on Awaji Island, which has a climate similar to the Mediterranean.Using durum wheat, also known as hard wheat, and finely crushing the core of the grain, we recreate a silky softness and chewy texture using a traditional hand-kneading method that has been passed down since the Meiji era. 《Carefully Selected Ingredients》 Eggs, Salt = "Ako Salt" from Hyogo Prefecture, Water = "Pure Water" to bring out the firmness and stickiness.
